We open all our Oysters from live daily.

We source our oysters from Coffin Bay in South Australia and Tasmania depending on the quality at the time.

Spawning season happens after Christmas and goes till late February or early March. While these varieties are unavailable we use Moreton Bay or Sydney Rock oysters which are a great oyster too but a little smaller and a slightly stronger taste.

For Christmas we will have Standard (XL) and plate Oysters as well as Rock Oysters.
